Job Summary

The Food & Beverage Manager, reporting directly to the property General Manager, will contribute to the performance of the hotel by supervising the operations of the Food & Beverage outlets to deliver an excellent guest experience.

He / she will be required to communicate and delegate tasks to the team to ensure departmental targets are achieved. In addition, ensuring that operations are managed effectively and are providing the highest level of service exceeding the guest service expectations.

It is not the intent of this job description to cover all aspects of the position but to highlight the most important areas of responsibility.

Key Responsabilities

Food & Beverage Operation

  • Ensuring that the operation delivers high standards of food and services in compliance with the company standards and with local regulations.
  • Works with the restaurant leader to ensure the appropriate staffing levels are maintained.
  • Assists with the delivery of training and coaching the hotel standards to ensure the food and beverage team can deliver the service required.
  • Is responsible for overseeing the customer satisfaction process as it relates to the food and beverage operations in the hotel.
  • Assists with the reconciliation of daily sales, generated through the food and beverage outlets.
  • Is responsible for the preparation of reports and monitoring data to develop the operation.
  • Monitoring of purchases, stock control and waste management in all outlets to deliver the required cost of sales percentage agreed in the annual budget.
  • Ensures proper security procedures are in place regarding the opening and closing of the outlets on a daily basis, reviewing the check lists to identify issues.
  • Supervises stations and ensures that the hotel and hygiene standards are maintained at all times.
  • Ensures the smooth preparation of the restaurant side-stations, mis-en-place and table set-ups as per the WHR standards.
  • Ensures the proper appearance of assigned associates.
  • Knowledgeable of the outlet’s menu, promotional activities and other relevant issues concerning the outlets and the hotel.
  • Contributes to meet and maximize the monthly revenue budget for the respective outlets.
  • Complies with both the hotel and local environmental, health and safety regulations, policies and procedures.
  • Reports any issue to the General Manager or the corresponding hotel department.
  • Plan and track departmental budget.
  • Plan and track departmental holidays and lieu days as per the needs of the business.
  • Leadership

  • Maintaining a business environment based on the Code of Conduct and Company Vision.
  • Coaches, trains and develops the F&B team.
  • Maintain and enhance the open door policy to all associates providing advice and guidance when needed in regards to their issues or concerns and / or grievances
  • Leadership of direct reports of the Food & Beverage team.
  • Collaborates with Human Resources with the recruitment and selection process of the Food & Beverage department. Conducts interviews for relevant roles in conjunction with HR.
  • Timely runs performance management process, ensures associate development and motivation, and takes care of team member counselling or any disciplinary issues.

  • Conduct regular coaching sessions / 1 : 1s with direct reports.
  • Ensure that the department is fully compliant with Wyndham people processes and deadlines that govern all Wyndham properties.
  • Ensure 100% compliance with all mandatory training for the departments.
  • Controlling the absences and payroll in the department in conjunction with the HR Leader on property to ensure accuracy and raises any areas of concern.
  • Education & Experience

  • A minimum of two years in a similar role in a branded hotel.
  • A degree in hospitality field.
  • Any other certificate in hygiene and health.
  • Customer driven.
  • Be able to work under pressure.
  • Great organizational plan skills.
  • Good Knowledge of Food and Beverage operation.
  • Good communication skills.
  • Ability to supervise team.
  • Demonstrate the fundamentals of the company’s Count on Me! service culture to be responsive, respectful and deliver a great experience.
